Dietary info: This celery, cucumber and apple smoothie is vegetarian, and easy to make dairy-free and vegan. It contains a host of vitamins and minerals from the fruit and veggies, as well as protein and fiber.
Ingredients
Celery: Remove the thickest strings from the celery stalks and give them a good wash before placing in the blender.
Cucumber: I prefer to peel the cucumber before blending for an extra smooth drink, but you can skip peeling it if you like.
Apple: Like the cucumber, I prefer to peel the apple. Any apple will work well, I used a Fuji apple that is nice and sweet.
Yogurt: Use a 0% fat Greek yogurt for a boost of protein. I used a vanilla yogurt to add a touch of sweetness, but plain works great too.
Almond Milk: I prefer to use a plant-based milk when making smoothies as they are lower in fat and calories. Use un unsweetened one, and either plain or vanilla.

Recipe Variations
The thing I love about smoothies is that they are so easy to adapt to suit your tastes. You can easily make this more of a breakfast smoothie by adding in some oats, or make it sweeter by adding in other fruits. Any of these add ins will work great with this celery, cucumber and apple smoothie:
Chia seeds
Frozen banana (will make it extra creamy and sweeter!)
Frozen mango
Oats
Maple syrup or honey (for sweetness)
Pineapple
Spinach (for extra anti-oxidants!)
Pear
Kale
Fresh Mint
Need an extra boost? Add in some protein powder.
The almond milk can be swapped for another plant-based alternative like soy milk or oat milk. Dairy milk can also be used.
To make this cucumber celery smoothie vegan and dairy-free, simply swap the Greek yogurt for a plant-based alternative.
Frequently Asked Questions
Are smoothies a good way to lose weight?
Just like most foods out there, smoothies can be super healthy….or not, and a lot of smoothies can be high in calories due to the natural sugars in fruits. This smoothie is on the lighter side as there are more veggies than fruit.
I always use plant-based milk like almond or oat as they are lower in calories and fats compared to dairy milk (though dairy will make your smoothie extra creamy!), and I rarely add a sweetener like maple syrup or honey.
Smoothies can be a great way to lose or maintain weight, and all those fresh fruits and veggies are never bad. Just be careful about how you load them up.
Are smoothies better than juices?
I prefer homemade smoothies over juices as you don’t loose any of the fiber from the ingredients when blending, you also don’t need to get through as much fresh produce! Juices have their own benefits for sure, but I do prefer smoothies as they tend to fill me up more.
What’s the best blender to use for smoothies?
I can’t tell a lie, since getting my Ninja blender, making smoothies has been so much easier! It has a high speed setting, which means that you get a super smooth drink every time, and the sides don’t need scraping down between blends.
I find that blending on low speed for 30 seconds, then high speed for around 45 seconds, gets perfect results.
Make Ahead and Storage
Smoothies are best enjoyed as soon as they are made. Once the ingredients are blended together, they start to oxidize and slowly lose vitamins and minerals, as well as taste.
If you can’t drink it right away, cover the glass with plastic wrap and store in the fridge. It will keep well for up to 24 hours. You can totally make one in the morning and enjoy it later that day for a pick me up.
Recipe Notes and Tips
For best results use a high speed blender. It may take slightly longer to get smooth in a regular blender.
I prefer to peel the apple and cucumber, but you can add them in without peeling.
This smoothie isn’t overly sweet. You can make it sweeter by adding in a little honey or maple syrup if you like.
To reduce sugar content, use a plain 0% Greek yogurt, rather than vanilla.
Make sure that the majority of ingredients are cold so that you don’t have to add ice as this can thin the smoothie. In a pinch, you can add an ice cube, or pour the smoothie over ice.
This celery, cucumber and apple smoothie is a wonderfully light and refreshing drink, and a super easy to get your veggies and fruits in for the day. Ready to enjoy in minutes, this is healthy eating at it’s most convenient!
