It’s raining here today. Not pouring rain, but lightly drizzling and has been all day long. Some people might complain about it, but I’ve actually been soaking it up. {No pun intended.} It makes it so we all {all = me, the dog, the husband, and the kid} have to stay inside together and play. Not that I really like hanging out inside all day, but it’s been a little bit euphoric trying to see how much we can get Addi laughing, while binge-watching Friends.
We’ve been home from church for a few hours and the moment we came home, Zach and I were both jonesing for something sweet. One problem – we leave for Mexico in seven days, people. SEVEN. Does my body feel ready for Mexico? No. Will I feel ready if I eat the whole pack of Oreos in the pantry like I want to? No. Which is why I was so excited when I remembered that there was a batch of this frozen yogurt in the freezer!
We pulled out our new Blendtec last night {totally in love, BTW} and whipped this frozen yogurt up real quick and I can’t even begin to tell you how amazing it is. It helps, that with our Blendtec, it literally takes 45 seconds to blend it up, real creamy and smooth-like, and then it’s just about waiting for it to freeze. Don’t have a Blendtec yourself? You may want to stop by tomorrow, because a little bird told me that there might just be one up for grabs. Free of charge. 😉
You would seriously never guess that the only thing that sweetened this frozen yogurt is honey. I’m all for using honey as a sweetener, but I don’t feel like it always comes out tasting like I want it to. This stuff will totally exceed your expectations. It only requires four ingredients total and will be the only dessert you need from here on out! We’ve made a peach version before and I think that both of them are equally delicious. This one is prettier though, if we are keeping score.

Ingredients
- 12
oz.
frozen raspberries- 1/2
cup
plain yogurt {I use Greek yogurt}- 1/4
cup
raw honey- 1
Tbsp.
fresh lemon juiceInstructions
Place all ingredients in blender and blend until completely smooth.
Transfer mixture to a freezable container {I use a small cake pan}, cover, and freeze for at lease 4 hours or overnight.
