Everything you need to make this cottage cheese alfredo sauce!
Cottage Cheese – I have learned that this ingredient is highly controversial haha! Some people love it and some people hate it! I love it and it is the perfect source of creamy protein for the sauce! If you like cottage cheese, you might want to check out some of my other recipes with cottage cheese!
2% Low Fat Milk – Or whatever milk you have at home! Just keep in mind this could change the calories a bit.
Garlic Powder – This is what gives the alfredo flavor to the sauce! If you want a stronger flavor, you can add more!
Salt – Because what is a sauce without salt haha!
Corn Starch – This is what thickens the sauce! Feel free to adjust measurements to your liking!
Grated Parmesan Cheese – This has to be my favorite part! It is the perfect garnish to this delicious sauce on your favorite pasta!
Best practices:
Be sure to completely blend your cottage cheese or you might end up with a bit of a clumpy sauce
When simmering this recipe, be sure to cook it till it is just hot to your liking as to not burn it! This could really change the flavor…
Rather than just pouring corn starch straight into the sauce, mix it with 1tbsp milk to avoid clumping!
What to serve this with for a healthy balanced diet
As you can see, I absolutely LOVE this sauce over some zoodles!! This could also go with Carbe Diem noodles or whatever your go-to noodles are!
1cupcottage cheesefat free
1/2cup2% low fat milk
1//4tspgarlic powder
1/8tspsalt
1tbspcorn starch
2tbspparmesan cheesegrated
Blend cottage cheese, milk, garlic powder and salt in a blender. Pour into a small saucepan and turn to low heat, just till it’s hot, turn heat down to simmer.
Whisk corn starch with 1 tablespoon cold milk, and add it to cottage cheese mixture. Let simmer for 5 minutes. Remove from heat and add parmesan cheese.
Serve with 1 medium spiralized zucchini, pasta, spaghetti squash or low carb noodles.
Cook zoodles or noodles, and top with 1/4 cup alfredo sauce.
