Delicious Low Carb Recipes
Eating low carb doesn’t mean you have to give up on flavorful and satisfying meals. There are so many delicious low carb recipes to choose from, whether you’re following a ketogenic, Atkins, or other low carb diet plan.
One of my favorite easy low carb recipes is for zucchini lasagna. You can replace regular lasagna noodles with thinly sliced zucchini or eggplant. Layer the veggies with your favorite sugar-free tomato sauce, meat sauce or pesto sauce, ricotta or cottage cheese, spinach, and shredded mozzarella. It’s so flavorful and comforting.
Another great recipe is for low carb meatloaf. Mix together ground beef, pork or turkey with chopped mushrooms, onions, garlic, eggs, almond flour, and seasonings. Top with sugar-free ketchup or barbecue sauce before baking for a perfect low carb comfort food.
If you have a sweet tooth, there are also lots of luscious low carb dessert options. My favorite is chocolate mug cake – you literally mix the batter in a mug and microwave it. Just blend together almond or coconut flour, unsweetened cocoa powder, sweetener, milk, oil, vanilla, and an egg. Top with whipped cream when it comes out for a decadent chocolate treat.
There are so many recipes to discover within the low carb, keto, and Atkins lifestyle. From hearty breakfasts to quick snacks to gourmet dinners, you’ll never run out of delicious new dishes to create. And many traditional recipes can be easily modified to be low carb as well. Get creative with vegetables, healthy fats, proteins, herbs and spices and you’ll make unforgettably tasty meals.
