Ingredients

sweet potatoes, peeled, rinsed and thinly sliced
1 handful
fresh rocket
1 handful
cherry tomatoes, halved

courgette (zucchini), thinly sliced
1 pinch
Himalayan pink salt
1 pinch

- In a skillet, add a small amount of oil and when hot, add the sweet potato slices. Cook for a few minutes on each side before removing and setting aside.
- Place the rocket on a plate and add all other ingredients.

Omit the feta for a fully vegan meal.
