Teresa’s summer rolls (3 rolls are 1 serving):
Adopted for Low carb, low fat meal. Sauce is optional and not included. Since it is and extra calories according to type and brand.
Ingredients:
- 3 serving Rice Paper (by LYNNHEATLEY)
- 5 oz Shrimp, cooked
- .5 medium Zucchini, baby
- 0.5 cucumber (8-1/4″) Cucumber (with peel)
- 3 leaf, medium Bib Lettuce
Instructions:
- Soak rice paper wafer in bowl of water for 10 seconds or until it starts to get soft (it will continue to softened while working with it), then lay rice paper on plate. Add bib lettuce leaf, then add other ingredients, add any spice or herbs you like such as fresh basil. Roll the ingredients up on like a burrito. Sweet spicy chili sauce and or hoisin sauce is delicious with these rolls.
- Serving Size: Makes 3 rolls which is one serving
